What's for supper tonight?
Grilled Potato Salad: 2 lbs. new potatoes(14-16) ; one-half med. red onion, very thinly sliced or 4 medium green onions, sliced(one-half cup); one-third cup olive oil or veg. oil; one-third cup chopped fresh or 2 T. dried parsley flakes; 1 T. chopped fresh or 1 t. dried oregano leaves; one-half t. salt; freshly ground pepper; 2 cloves garlic, finely chopped. Heat 1-inch water(salted if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 15 minutes; drain and cool. Cut potatoes in half. Spray with cooking spray. Heat coals or gas grill. Cover and grill potatoes 5-10 minutes, or until tender. Gently mix potatoes and remaining ingredients. Serve immediately. 6 servings. 30 minutes total.
